Scale
Fudge Ingredients
- 2 (12 ounce) bags white chocolate chips
- 2 tablespoons unsalted butter
- 1 (14-ounce) can sweetened condensed milk
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon sea salt
- ½ teaspoon ground cardamom
- ½ teaspoon ground ginger
- ½ teaspoon ground cloves
- Leaves from 1 black tea bag, about 1 teaspoon
Instructions
- Prepare the pan: Line an 8 x 8-inch or 9 x 9-inch baking pan with parchment paper to ensure the fudge doesn’t stick and can be easily lifted out once set.
- Melt ingredients: In a small saucepan over medium heat, combine white chocolate chips, unsalted butter, and sweetened condensed milk. Stir continuously until the white chocolate chips have completely melted and the mixture is smooth, about 6 minutes. This step prevents burning and creates a creamy base.
- Add flavorings: Remove the saucepan from the heat, then stir in the vanilla extract, ground cinnamon, sea salt, ground cardamom, ground ginger, ground cloves, and black tea leaves. Mix thoroughly to blend all chai spices evenly into the fudge mixture.
- Set the fudge: Pour the spiced fudge mixture into the prepared parchment-lined pan, spreading it evenly. Chill in the refrigerator for at least 60 minutes or until the fudge is firm and set.
- Serve and store: Once set, cut the fudge into bite-sized squares. Serve immediately, or store in an airtight container in the refrigerator for up to one week to maintain freshness.
Notes
- For a smoother texture, finely crush the black tea leaves before adding them to the fudge.
- If preferred, substitute the black tea leaves with chai tea powder for more intense chai flavor.
- The fudge can be packed in small gift boxes and makes a wonderful homemade holiday gift.
- Ensure low heat when melting white chocolate to prevent burning or graininess.
- For a dairy-free version, use vegan white chocolate chips and a suitable vegan condensed milk alternative.
