Gyoza Dumplings:

  • 20 gyoza or potstickers

Soup Base:

  • 1 tbsp vegetable oil
  • 4 garlic cloves, grated
  • 1 tsp grated ginger
  • 4 cups chicken broth
  • 1 can (14 oz/400 ml) unsweetened coconut milk, full fat
  • 1 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tsp toasted sesame oil
  • 3 tbsp Thai red curry paste
  • 1 tsp brown sugar
  • 2 tbsp lime juice

Optional Toppings:

  • Chopped chives
  • Your favorite vegetables

Instructions

  1. Prep: Bring a large saucepan of salted water to a boil. Grate the garlic and ginger.
  2. Sauté Aromatics: Heat oil in a pot, sauté garlic and ginger for 30 seconds.
  3. Make Soup Base: Pour in chicken broth and coconut milk. Add soy sauce, fish sauce, sesame oil, brown sugar, Thai red curry paste, and lime juice. Stir well until curry paste dissolves. Bring to a boil, then simmer for 5 minutes.
  4. Cook Dumplings: Cook gyoza in boiling water per package instructions, about 2-3 minutes. Drain when ready.
  5. Serve: Divide dumplings among plates, pour hot coconut soup over them. Top with chives and veggies. Enjoy!
