- 1/2 cup warm water
- 1 teaspoon granulated sugar
- 2 cups milk, scalded and cooled to lukewarm
- 3 tablespoons unsalted butter, melted and slightly cooled
- 1/2 cup granulated sugar
- 7 cups all-purpose flour, or up to 8 cups
- 2 large eggs
- 2 teaspoons salt
- 2 tablespoons unsalted butter, melted, for brushing
For the Cinnamon Honey Butter:
- 1 stick (1/2 cup) unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 cup honey
- 1 teaspoon ground cinnamon
Instructions
- Activate Yeast: In the bowl of a stand mixer, whisk together warm water, yeast, and 1 teaspoon of sugar. Let stand for 10-15 minutes, or until foamy.
- Make Dough: Add milk, melted butter, ½ cup sugar, eggs, and salt to the yeast mixture. Mix with the dough hook for 1 minute. Gradually add flour, 2-3 cups at a time, until a soft dough forms. Knead with the dough hook until the dough pulls away from the sides of the bowl.
- First Rise: Place the dough in a greased bowl, cover with a damp towel, and let rise in a warm place until doubled in bulk.
- Shape Rolls: Punch down dough and divide into 2 portions. On a lightly floured surface, roll out each portion to ½-inch thickness. Cut into squares or rectangles. Place rolls on greased baking sheets.
- Second Rise: Let rolls rise until doubled in size. Preheat oven to 350°F (175°C) while the rolls are rising.
- Bake: Bake for 15-20 minutes, or until golden brown. Brush with melted butter immediately after removing from oven.
- Make Cinnamon Honey Butter: While rolls are baking, whisk together softened butter, powdered sugar, honey, and cinnamon until smooth.
- Serve: Serve warm rolls with cinnamon honey butter.
Notes
- Milk: Make sure the milk is scalded and cooled to lukewarm for optimal yeast activation.
