Ingredients:
- 375 grams ground Italian sausage, casings removed
- 2 cups chopped bell peppers (any color)
- 1/2 medium onion, finely diced
- 2 cups low-sodium chicken broth
- 1 cup salsa or tomato sauce
- 2 cloves garlic, minced
- 3/4 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin
- 1 cup long grain white rice, rinsed
- 1 cup shredded mozzarella cheese
Instructions
- Cook the Italian Sausage: In a large skillet over medium-high heat, crumble and cook the Italian sausage until beginning to brown. Add peppers and onion and cook until crisp-tender, about 5 minutes.
- Add Seasonings: Stir in garlic, salt, oregano, pepper, and cumin, and cook for 1 minute.
- Combine Ingredients: Add broth, scrape any browned bits off the bottom of the pan, and stir in the salsa. Add rinsed rice and bring to a simmer.
- Cook the Casserole: Cover and simmer for 15-20 minutes until the rice is cooked through. Alternatively, you can bake at 350°F for 20-30 minutes.
- Finish and Serve: Sprinkle with cheese, cover, and let rest for 5 minutes before serving.
