Ingredients
Scale
Ingredients
- 6 Tablespoons unsalted butter
- 8 cups mini marshmallows, divided (save 1 cup to toss in at the end)
- 1 oz bag freeze dried strawberries, pulsed to a fine powder in a food processor
- 6 cups Rice Krispie cereal
Instructions
- Prepare the cookie sheet: Swipe a large cookie sheet with shortening to prevent sticking, then set it aside for later.
- Melt the butter: In a large pot over medium heat, melt the 6 tablespoons of unsalted butter until fully liquefied.
- Melt marshmallows: Add 7 cups of the mini marshmallows to the melted butter. Stir continuously with a spatula until the marshmallows have completely melted, which should take about 1 minute.
- Add strawberry powder: Stir in the freeze dried strawberry powder to the melted marshmallow mixture until evenly combined.
- Mix in cereal and reserved marshmallows: Turn off the heat. Add 6 cups of Rice Krispie cereal to the pot and stir until all the cereal is coated well with the strawberry marshmallow mix. Then toss in the reserved 1 cup of mini marshmallows and gently fold them in. These will create little white marshmallow pockets that don’t fully melt.
- Spread the mixture: Immediately transfer the mixture onto the prepared cookie sheet. Using slightly greased hands, press and spread the mixture evenly and firmly to create a flat layer.
- Cool and firm up: Let the pan of treats cool and firm for 10-15 minutes, allowing them to set.
- Flip and cut shapes: Flip the rice krispie sheet onto a sheet of parchment paper. Use a heart-shaped cookie cutter to cut out hearts closely packed together. The number of treats depends on the size of the cutter.
- Store and enjoy: Place the heart-shaped treats in an airtight container or gallon-size ziplock bag. They stay fresh and soft for several days. Enjoy your strawberry-flavored Rice Krispie treats!
Notes
- Use shortening on your hands or spatula when pressing down the mixture to prevent sticking.
- The reserved marshmallows added at the end keep parts of the treat extra gooey with visible marshmallow pockets.
- If you don’t have freeze dried strawberries, you can substitute with strawberry powder or crush freeze dried raspberries for a similar effect.
- For easy cleanup, add water to the pot while it cools after mixing to loosen any marshmallow residue.
- Store treats at room temperature in an airtight container for up to 3-4 days for best freshness.
