  • 8 cups mini marshmallows, divided (save 1 cup to toss in at the end)
  • 1 oz bag freeze dried strawberries, pulsed to a fine powder in a food processor
  • 6 cups Rice Krispie cereal

Instructions

  1. Prepare the cookie sheet: Swipe a large cookie sheet with shortening to prevent sticking, then set it aside for later.
  2. Melt the butter: In a large pot over medium heat, melt the 6 tablespoons of unsalted butter until fully liquefied.
  3. Melt marshmallows: Add 7 cups of the mini marshmallows to the melted butter. Stir continuously with a spatula until the marshmallows have completely melted, which should take about 1 minute.
  4. Add strawberry powder: Stir in the freeze dried strawberry powder to the melted marshmallow mixture until evenly combined.
  5. Mix in cereal and reserved marshmallows: Turn off the heat. Add 6 cups of Rice Krispie cereal to the pot and stir until all the cereal is coated well with the strawberry marshmallow mix. Then toss in the reserved 1 cup of mini marshmallows and gently fold them in. These will create little white marshmallow pockets that don’t fully melt.
  6. Spread the mixture: Immediately transfer the mixture onto the prepared cookie sheet. Using slightly greased hands, press and spread the mixture evenly and firmly to create a flat layer.

  8. Flip and cut shapes: Flip the rice krispie sheet onto a sheet of parchment paper. Use a heart-shaped cookie cutter to cut out hearts closely packed together. The number of treats depends on the size of the cutter.
