Egg Wash:

  • 1 egg whisked with 1 tablespoon of water

Cheese Filling:

  • 1/4 cup grated mozzarella
  • 1 green onion, chopped
  • 1/2 teaspoon garlic salt
  • A few grates of fresh nutmeg
  • 1 10ounce package of frozen chopped spinach, defrosted and squeezed dry
  • 1 puff pastry sheet, defrosted (look for a brand made with butter like Dufour)

Instructions

  1. Prepare Egg Wash: Whisk together the egg and water, and set aside.
  2. Prepare Cheese Filling: Mix together the cheeses, onion, and seasonings. Set aside.
  3. Assemble Pinwheels: Roll out the puff pastry on a lightly floured surface. Brush the surface with the egg wash. Top with the cheese mixture and spinach, leaving an inch free on one short side. Roll up the pastry like a jellyroll.
  4. Cut and Bake: Slice the roll into ½-¾ inch slices and place on baking sheets. Chill in the refrigerator or freezer while preheating the oven to 400°F. Bake for 15 minutes or until golden.
