Egg Wash:
- 1 egg whisked with 1 tablespoon of water
Cheese Filling:
- 1/2 cup crumbled feta (buy a block and crumble it yourself)
- 1/4 cup grated mozzarella
- 1 green onion, chopped
- 1/2 teaspoon garlic salt
- A few grates of fresh nutmeg
- 1 10–ounce package of frozen chopped spinach, defrosted and squeezed dry
- 1 puff pastry sheet, defrosted (look for a brand made with butter like Dufour)
Instructions
- Prepare Egg Wash: Whisk together the egg and water, and set aside.
- Prepare Cheese Filling: Mix together the cheeses, onion, and seasonings. Set aside.
- Assemble Pinwheels: Roll out the puff pastry on a lightly floured surface. Brush the surface with the egg wash. Top with the cheese mixture and spinach, leaving an inch free on one short side. Roll up the pastry like a jellyroll.
- Cut and Bake: Slice the roll into ½-¾ inch slices and place on baking sheets. Chill in the refrigerator or freezer while preheating the oven to 400°F. Bake for 15 minutes or until golden.
Notes
- For added flavor, consider adding sun-dried tomatoes or olives to the filling.
- These pinwheels can be made ahead and frozen before baking for a convenient appetizer option.
