Chicken:
- 1 1/2 lb boneless skinless chicken breasts or thighs, thinly sliced
- 1 tbsp cornstarch or arrowroot powder
- 1 tablespoon tamari or soy sauce
- 2 tbsp extra virgin olive oil
- Black pepper
- 2 tbsp orange juice
- 1/4 cup honey
- 2–3 tbsp chili paste
- 1 tbsp chopped fresh ginger
- 2 cloves garlic, chopped
Yum Yum Sauce:
- 1/3 cup olive oil mayo
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp seasoned salt
- 1/4 tsp cayenne
- For Serving: cooked rice, cucumber, avocado, kimchi, and fried wontons
Instructions
- Preheat the oven: Preheat the oven to 425°F.
- Prepare the chicken: Toss the chicken with tamari, orange juice, and season with pepper. Sprinkle with cornstarch, drizzle with olive oil, and bake for 15 minutes.
- Make the sauce: Whisk together tamari, orange juice, honey, chili paste, garlic, and ginger.
- Coat the chicken: Pour most of the sauce over the cooked chicken, bake for an additional 5 minutes, then broil for 1-2 minutes.
- Prepare the yum yum sauce: Mix mayo, ketchup, Worcestershire sauce, seasoned salt, and cayenne.
- Assemble the bowls: Serve rice topped with cucumber, avocado, chicken, kimchi, green onions, fried wontons, and yum yum sauce.
