- 1/2 yellow onion, roughly chopped
- 1/2 cup red wine
- 1/2 cup packed fresh basil leaves
- 3 cloves garlic, finely minced
- 2 tablespoons fresh oregano, minced
- 2 tablespoons granulated sugar
- 2 tablespoons olive oil
- 1 teaspoon salt, plus more to taste
- 1/2 teaspoon ground black pepper
Instructions
- Combine Ingredients: Add all ingredients to the slow cooker and stir to combine.
- Roughly Blend (Optional): Use an immersion blender to lightly blend the mixture until there are no large chunks. Alternatively, pulse a few times in a regular blender for a chunky consistency.
- Cook: Cover and cook on LOW for 8 hours (or overnight), or on HIGH for 4-8 hours.
- Blend and Season: Taste and add more salt as needed. Use an immersion blender or a regular blender to blend the sauce to your desired consistency.
- Serve or Store: Serve the sauce immediately over cooked pasta, or store in an airtight container in the refrigerator for up to 4 days.

- Tomato Variety: While Roma tomatoes are recommended for their flavor and texture, you can use any type of tomato you have on hand.
