Description

This Slow Cooker Homemade Tomato Sauce is a simple and flavorful recipe that’s perfect for busy weeknights. Fresh tomatoes, herbs, and a touch of red wine simmer slowly in a crockpot, creating a rich and delicious sauce that’s perfect for pasta, pizza, or dipping.


Ingredients

  • 6 pounds tomatoes, roughly chopped (Roma tomatoes recommended)
  • 1/2 yellow onion, roughly chopped
  • 1/2 cup red wine
  • 1/2 cup packed fresh basil leaves
  • 3 cloves garlic, finely minced
  • 2 tablespoons fresh oregano, minced
  • 2 tablespoons granulated sugar
  • 2 tablespoons olive oil
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon ground black pepper

Instructions

  1. Combine Ingredients: Add all ingredients to the slow cooker and stir to combine.
  2. Roughly Blend (Optional): Use an immersion blender to lightly blend the mixture until there are no large chunks. Alternatively, pulse a few times in a regular blender for a chunky consistency.
  3. Cook: Cover and cook on LOW for 8 hours (or overnight), or on HIGH for 4-8 hours.
  4. Blend and Season: Taste and add more salt as needed. Use an immersion blender or a regular blender to blend the sauce to your desired consistency.
  5. Serve or Store: Serve the sauce immediately over cooked pasta, or store in an airtight container in the refrigerator for up to 4 days.

Notes

  • Tomato Variety: While Roma tomatoes are recommended for their flavor and texture, you can use any type of tomato you have on hand.
  • Slow Cooker Size: This recipe is best suited for a 6-quart slow cooker. If you have a smaller slow cooker, you may need to reduce the recipe.
  • Wine: If you prefer not to use wine, you can substitute it with an equal amount of vegetable broth or water.
