Meat and Dairy
- 4 boneless, skinless chicken breasts
- 1 tablespoon butter
- 1/2 cup freshly grated Parmesan cheese
Sauces and Condiments
- 2 (15-ounce) jars Alfredo sauce with roasted garlic
- 2 (3-ounce) packages slivered sun-dried tomatoes (not in oil)
Spices and Seasonings
- salt and pepper to taste
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon crushed red pepper flakes
Vegetables
- 1 (5-ounce) bag baby spinach leaves
Instructions
- Melt butter and prepare chicken: In a nonstick pan over medium-high heat, melt the butter. Season the chicken breasts generously with salt and pepper, then add them to the pan. Cook until browned on both sides, about 3-4 minutes per side, until golden.
- Transfer chicken to slow cooker: Place the browned chicken breasts into a lightly greased 6-quart slow cooker, ensuring even spacing.
- Prepare sauce: In a medium bowl, combine the Alfredo sauce, sun-dried tomatoes, Parmesan cheese, Italian seasoning, and crushed red pepper flakes. Mix well to combine.
- Combine and cook: Pour the sauce mixture over the chicken in the slow cooker. Cover and cook on LOW for 3 to 4 hours until the chicken is cooked through and tender.
- Add spinach: Open the slow cooker, stir in the baby spinach leaves, then cover and cook for an additional 5 minutes until the spinach wilts.
- Serve: Serve the creamy Tuscan chicken hot, spooning some of the sauce over each serving.
Notes
- For a richer flavor, use freshly grated Parmesan cheese rather than pre-grated.
- Feel free to adjust spice levels by adding more crushed red pepper flakes according to your heat preference.
- This dish pairs well with cooked pasta, rice, or crusty bread to soak up the sauce.
- For gluten-free version, ensure the Alfredo sauce and sun-dried tomatoes are gluten-free.
