Description

Slow Cooker Cowboy Sandwiches are a hearty and flavorful dish featuring tender shredded chuck roast cooked low and slow with BBQ sauce, bacon, onions, garlic, and green chilies. This easy recipe delivers mouthwatering, saucy beef piled high on toasted buns and topped with cheddar cheese, crispy fried onions, and extra bacon for a comforting and satisfying sandwich perfect for family dinners or casual gatherings.

Ingredients

Scale

Main Ingredients

  • 3 lbs chuck roast
  • 1 cup BBQ sauce
  • 1 lb bacon, cooked and divided
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 cans (7 oz each) diced green chilies
  • 1/3 cup brown sugar

For Serving

  • Shredded cheddar cheese (or sliced)
  • 1 cup crispy fried onions
  • Hamburger buns

Instructions

  1. Cook the Bacon: Cook the bacon until crispy using your preferred method. Let it cool slightly, then chop into pieces. Divide the bacon in half, reserving one half to be added to the slow cooker and the other half for topping the sandwiches later.
  2. Prepare Slow Cooker: Place the chuck roast in the slow cooker. Add BBQ sauce, sliced onion, minced garlic, Worcestershire sauce, diced green chilies, brown sugar, and half of the cooked bacon on top of the roast. Stir gently to combine the ingredients evenly over the meat.
  3. Slow Cook the Beef: Cover the slow cooker and cook on low heat for 8-9 hours or on high for 5-6 hours until the beef is extremely tender and shreds easily with a fork.
  4. Shred the Beef: Using two forks, shred the beef directly within the slow cooker. Mix thoroughly to coat the shredded meat evenly with the sauce and all ingredients.
  5. Toast Crispy Fried Onions: Heat a frying pan over medium heat. Add the crispy fried onions and toast them while stirring occasionally for 3-5 minutes until golden and fragrant. Remove from heat and set aside.
  6. Assemble Sandwiches: Split and optionally toast the hamburger buns lightly. Pile a generous amount of the shredded beef mixture onto the bottom half of each bun. Top with shredded cheddar cheese, reserved bacon pieces, and toasted crispy fried onions. Place the top bun half over the toppings.
  7. Serve Warm: Serve sandwiches warm, allowing the cheese to melt slightly from the heat of the beef. Enjoy immediately for best flavor and texture.
