This easy and flavorful sheet pan sausage and veggies recipe is a perfect weeknight meal. Packed with colorful vegetables and savory turkey sausage, it’s a healthy and satisfying dish that requires minimal cleanup.

- 1 small zucchini, cut into coin shapes and halved
- 1 cup green beans, trimmed
- 1 red bell pepper, diced
- 1 1/2 cups broccoli florets, cut into bite-sized pieces
- 12 ounces turkey sausage, cut into coin shapes
- 1 1/2 – 2 cups baby red potatoes, diced
- 3 tbsp olive oil
- 1/2 tsp garlic powder
- 1 tsp paprika
- 1 tbsp dried oregano
- Salt & pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- Preheat and Prepare: Preheat oven to 425°F (220°C). Line a large sheet pan with foil or parchment paper.
- Prep Vegetables and Sausage: Chop the red potatoes into small pieces, trim and halve the green beans, chop the broccoli florets, dice the red bell pepper, and slice the turkey sausage into thick coins.
- Combine Ingredients: Place all the vegetables and sausage on the prepared sheet pan.
- Season: Drizzle olive oil over the ingredients, then sprinkle with garlic powder, paprika, dried oregano, salt, and pepper. Toss to coat evenly.
- First Bake: Bake for 15 minutes.
- Flip and Continue Baking: Remove the sheet pan from the oven and flip/stir the vegetables and sausage. Return to the oven and bake for another 10-15 minutes, or until the vegetables are crisp-tender and the sausage is browned.
- Serve: Sprinkle with freshly grated Parmesan cheese (if using) immediately after removing from the oven. Serve hot.
Notes
- Feel free to use other vegetables like carrots, onions, or cauliflower.
- You can substitute chicken sausage or another type of sausage for the turkey sausage.
- Adjust the seasoning to your preference.
- Make sure the vegetables are spread in a single layer to ensure even cooking.
- For extra crispiness, you can broil the sheet pan for the last few minutes of cooking.
