Description

This easy and flavorful sheet pan sausage and veggies recipe is a perfect weeknight meal. Packed with colorful vegetables and savory turkey sausage, it’s a healthy and satisfying dish that requires minimal cleanup.


Ingredients

  • 1 small zucchini, cut into coin shapes and halved
  • 1 cup green beans, trimmed
  • 1 red bell pepper, diced
  • 1 1/2 cups broccoli florets, cut into bite-sized pieces
  • 12 ounces turkey sausage, cut into coin shapes
  • 1 1/22 cups baby red potatoes, diced
  • 3 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp dried oregano
  • Salt & pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Preheat and Prepare: Preheat oven to 425°F (220°C). Line a large sheet pan with foil or parchment paper.
  2. Prep Vegetables and Sausage: Chop the red potatoes into small pieces, trim and halve the green beans, chop the broccoli florets, dice the red bell pepper, and slice the turkey sausage into thick coins.
  3. Combine Ingredients: Place all the vegetables and sausage on the prepared sheet pan.
  4. Season: Drizzle olive oil over the ingredients, then sprinkle with garlic powder, paprika, dried oregano, salt, and pepper. Toss to coat evenly.
  5. First Bake: Bake for 15 minutes.
  6. Flip and Continue Baking: Remove the sheet pan from the oven and flip/stir the vegetables and sausage. Return to the oven and bake for another 10-15 minutes, or until the vegetables are crisp-tender and the sausage is browned.
  7. Serve: Sprinkle with freshly grated Parmesan cheese (if using) immediately after removing from the oven. Serve hot.

Notes

  • Feel free to use other vegetables like carrots, onions, or cauliflower.
  • You can substitute chicken sausage or another type of sausage for the turkey sausage.
  • Adjust the seasoning to your preference.
  • Make sure the vegetables are spread in a single layer to ensure even cooking.
  • For extra crispiness, you can broil the sheet pan for the last few minutes of cooking.
