This Sheet Pan Kielbasa and Vegetables recipe is a simple and flavorful one-pan meal that combines smoked Kielbasa sausages with an array of colorful vegetables, all roasted to perfection with a delicious spice mix.

Kielbasa and Vegetables
- 4 smoked Kielbasa sausages, sliced about 1/2 inch thick
- 4–5 red potatoes, sliced about 1/2 inch thick
- 3/4 red onion, quartered
- 2–3 carrots, sliced about 1/4 – 1/2 inch thick
- 2 small zucchinis, sliced about 1/2 inch thick
- 2 smaller yellow squashes, sliced about 1/2 inch thick
- 3 Tbsp extra virgin olive oil, divided
Spice Mix
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp dried parsley
- 1/2 tsp garlic powder
- 1 tsp paprika
- Sea salt and pepper to taste
Instructions
- Preheat the oven: Preheat the oven to 400 degrees and combine all the ingredients for the spice mix in a small bowl.
- Slice ingredients: Slice all the sheet pan ingredients. Separate the squash from the other ingredients.
- Roast first batch: Add the kielbasa, potatoes, carrots, and onions to the sheet pan. Drizzle half of the olive oil and 3/4 of the seasoning mix. Roast for 15 minutes.
- Prepare squash: Remove kielbasa and set aside. Add squash, remaining olive oil, and spice mix. Roast for another 15 minutes.
- Combine and serve: Add kielbasa back to the pan, toss with vegetables. Season with additional salt, pepper, and parsley. Enjoy!
