Description

This Sheet Pan Gnocchi Dinner is a quick and easy one-pan meal that’s perfect for busy weeknights. Tender gnocchi, savory kielbasa, and colorful vegetables are roasted together and then tossed with a creamy spinach sauce for a delicious and satisfying dish.

  • 14 oz kielbasa, sliced into thick rounds
  • 1 pint cherry tomatoes
  • 2 bell peppers (any color), diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 cups fresh baby spinach
  • 1 1/2 cups heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, finely grated
  • 1 tablespoon Dijon mustard
  • 1/4 cup fresh basil, torn
  • Kosher salt and freshly cracked black pepper, to taste

Instructions

  1. Roast Ingredients: Preheat oven to 425°F (220°C). On a large baking sheet, toss together gnocchi, kielbasa, cherry tomatoes, bell peppers, red onion, and olive oil. Season with salt and pepper. Roast for 18-22 minutes, tossing halfway through, until gnocchi and vegetables are tender and slightly browned.
  2. Make Creamy Sauce: While the sheet pan ingredients are roasting, heat heavy cream in a saucepan over medium-low heat. Reduce the cream by half, then whisk in Parmesan cheese, minced garlic, and Dijon mustard until a thick sauce forms. Stir in spinach and cook for 1-2 minutes, or until wilted. Season with salt and pepper to taste.
  3. Assemble and Serve: Remove the sheet pan from the oven. Pour the creamy spinach sauce over the roasted ingredients and toss gently to combine. Garnish with fresh basil and serve immediately.
