This Sheet Pan Flank Steak with Garlic Roasted Potatoes recipe is a delicious and easy one-pan meal that’s perfect for a quick weeknight dinner. Tender flank steak is paired with crispy roasted potatoes, broccoli, onions, and red peppers, all seasoned with aromatic garlic, cumin, and oregano.

For the Flank Steak:

  • 2 pounds Flank Steak
  • 4 Cloves Garlic, finely chopped
  • Salt and Pepper, to taste

For the Roasted Potatoes:

  • 2 pounds Small Red Potatoes
  • 2 cups Broccoli
  • 1 Medium Onion, sliced
  • 1 Red Pepper, cut into cubes
  • 1/4 cup Olive Oil
  • 12 Tablespoons Ground Cumin
  • 1 Tablespoon Dried Oregano
  • Salt and Pepper, to taste

Instructions

  1. Preheat the oven: Preheat your oven to high in broil mode.
  2. Prepare the sheet pan: Add cooking spray or olive oil to the sheet pan.
  3. Boil the potatoes: Boil the red potatoes with salt for 20 minutes.
  4. Prepare the vegetables: In a large bowl, combine 2 cloves of garlic, olive oil, cumin, oregano, salt, and pepper. Mix well and add broccoli, onions, red pepper, and boiled potatoes. Transfer the mixture to the sheet pan.
  5. Season the steak: Season the flank steak with salt, pepper, and the remaining garlic. Cut into thin slices and add to the sheet pan.
  6. Cook in broiler: Place the sheet pan in the broiler for 5-7 minutes. Flip the meat and continue cooking for an additional 5-7 minutes or until desired doneness is reached.
