Pasta:

Sausage Pepper Mixture:
- 1 pound ground Italian sausage
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, diced
- 2 15–ounce cans diced tomatoes
- 3 teaspoons Italian seasoning
For Serving:
- Parmesan cheese for topping
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions. Reserve 1 cup of pasta water before draining.
- Cook the Sausage: In a large skillet over medium-high heat, cook the Italian sausage until browned, about 6 minutes. Drain any excess fat.
- Add Veggies and Seasoning: Add the diced onions to the skillet and cook until tender. Then, add the sliced bell peppers, diced tomatoes, and Italian seasoning. Cook until the peppers have softened, about 8-10 minutes.
- Combine Everything: Return the drained pasta to the pot. Add the sausage and pepper mixture, mixing well. If needed, add pasta water gradually until desired consistency is reached.
- Serve: Serve the pasta hot, topped with Parmesan cheese.
