Sausage Pepper Mixture:

  • 2 15ounce cans diced tomatoes
  • 3 teaspoons Italian seasoning

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Cook the Sausage: In a large skillet over medium-high heat, cook the Italian sausage until browned, about 6 minutes. Drain any excess fat.
  3. Add Veggies and Seasoning: Add the diced onions to the skillet and cook until tender. Then, add the sliced bell peppers, diced tomatoes, and Italian seasoning. Cook until the peppers have softened, about 8-10 minutes.
  4. Combine Everything: Return the drained pasta to the pot. Add the sausage and pepper mixture, mixing well. If needed, add pasta water gradually until desired consistency is reached.
