Description

Salisbury Steak is a classic American comfort food dish featuring savory beef patties smothered in a rich mushroom gravy. This easy-to-make recipe delivers a hearty, satisfying meal perfect for family dinners or special occasions.

Ingredients

Units Scale

For the Steaks:

  • 1 pound lean ground beef (450g)
  • 1/4 cup panko breadcrumbs (14g)
  • 1 tablespoon ketchup
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 garlic cloves, minced
  • 1 large egg, beaten
  • 1 tablespoon olive oil

For the Gravy:

  • 2 tablespoons unsalted butter
  • 1 small onion, diced (165g)
  • 6 ounces mushrooms, sliced (170g)
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups beef stock or beef broth (360mL)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Prepare the steak mixture: In a medium bowl, mix all of the steak ingredients except the oil together until well combined.
  2. Shape the patties: Shape the meat mixture evenly into 4 oval patties, about ¾-inch thick.
  3. Cook the patties: Heat the oil in a large skillet over medium-high heat. Add the patties and cook until well browned on each side, about 3 minutes per side. Remove from skillet and set aside.
  4. Start the gravy: Add the butter to the same skillet and melt over medium heat. Add the onion, mushrooms, and garlic. Cook, stirring frequently, until the onion is softened, about 5 minutes.
  5. Thicken the gravy: Add the flour and stir constantly for 1 minute. Gradually stir in the stock. Add the Worcestershire sauce, salt, and pepper. Bring to a boil, then reduce the heat to low.
  6. Finish cooking: Return the patties to the skillet, nestling them among the gravy. Cook until the patties are cooked through and the gravy has thickened, about 5 to 7 minutes. Serve garnished with chopped parsley.

Notes

  • Avoid overmixing the meat to prevent tough patties.
  • Shape patties evenly for uniform cooking.
  • Sear patties to lock in flavor and juices.
  • Adjust gravy consistency by simmering longer or adding cornstarch slurry if needed.
  • Cook patties in batches if necessary to avoid overcrowding.
  • Taste and adjust seasonings in the gravy before serving.
