For the Steaks:
- 1 pound lean ground beef (450g)
- 1/4 cup panko breadcrumbs (14g)
- 1 tablespoon ketchup
- 2 teaspoons Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 garlic cloves, minced
- 1 large egg, beaten
- 1 tablespoon olive oil
For the Gravy:
- 2 tablespoons unsalted butter
- 1 small onion, diced (165g)
- 6 ounces mushrooms, sliced (170g)
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef stock or beef broth (360mL)
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Prepare the steak mixture: In a medium bowl, mix all of the steak ingredients except the oil together until well combined.
- Shape the patties: Shape the meat mixture evenly into 4 oval patties, about ¾-inch thick.
- Cook the patties: Heat the oil in a large skillet over medium-high heat. Add the patties and cook until well browned on each side, about 3 minutes per side. Remove from skillet and set aside.
- Start the gravy: Add the butter to the same skillet and melt over medium heat. Add the onion, mushrooms, and garlic. Cook, stirring frequently, until the onion is softened, about 5 minutes.
- Thicken the gravy: Add the flour and stir constantly for 1 minute. Gradually stir in the stock. Add the Worcestershire sauce, salt, and pepper. Bring to a boil, then reduce the heat to low.
- Finish cooking: Return the patties to the skillet, nestling them among the gravy. Cook until the patties are cooked through and the gravy has thickened, about 5 to 7 minutes. Serve garnished with chopped parsley.
Notes
- Avoid overmixing the meat to prevent tough patties.
- Shape patties evenly for uniform cooking.
- Sear patties to lock in flavor and juices.
- Adjust gravy consistency by simmering longer or adding cornstarch slurry if needed.
- Cook patties in batches if necessary to avoid overcrowding.
- Taste and adjust seasonings in the gravy before serving.
