Instructions

  2. Prepare sweet potatoes: Wash the sweet potatoes thoroughly and pat them dry. Slice each potato into approximately ⅓-inch thick round slices to ensure even roasting.
  3. Coat with oil: Drizzle the olive oil onto a large rimmed baking sheet. Add the sweet potato slices and gently turn them to coat evenly in the oil. Use two baking sheets if needed to avoid crowding; the slices should not touch to ensure proper roasting.
