Instructions

  1. Prepare the aioli: In a small bowl, combine the mayonnaise, prepared horseradish, and fresh lemon juice. Mix well and refrigerate for about 30 minutes to let the flavors meld and the sauce chill.
  2. Preheat and season shrimp: Preheat your oven to 400°F (204°C). Pat the shrimp dry thoroughly using paper towels to ensure they roast properly. Transfer them to a medium bowl, drizzle with extra-virgin olive oil, then season with kosher salt and freshly ground black pepper. Toss gently to coat all shrimp evenly.
  3. Roast the shrimp: Line a baking sheet with aluminum foil. Arrange the shrimp in a single layer on the sheet, spacing them about half an inch apart to allow even roasting. Place the sheet in the oven and roast the shrimp for 5 to 6 minutes, turning them halfway through, until they turn pink and are cooked through.
