Puff Pastry and Dressing

  • 2 Tbsp. store-bought thousand island dressing, plus more for serving

  • 6 thin slices Swiss cheese
  • 1/4 cup chopped sauerkraut, drained

Instructions

  1. Prepare the Puff Pastry: Place a sheet of plastic wrap measuring at least 16″ x 12″ on your work surface. Unfold the thawed puff pastry in the center of the plastic wrap, then roll it gently with a rolling pin into a 14″ x 10″ rectangle to ensure even thickness.
  2. Add the Dressing and Fillings: Spread a thin, even layer of thousand island dressing over the pastry, leaving a 1/4″ border along both long edges. Arrange the thinly sliced corned beef over the dressing, slightly overlapping so it fully covers the surface. Layer the Swiss cheese slices evenly on top, without overlapping. Finally, spread the chopped, drained sauerkraut lengthwise in a line down the center of the pastry.
  3. Roll the Pastry: Beginning at one long edge, carefully roll the pastry into a tight log, using the plastic wrap to help guide and compress the roll. Wrap the log tightly in the plastic wrap and place it seam side down in the refrigerator. Chill for about 20 minutes until firm.
  4. Preheat and Slice: Preheat your oven to 400°F (200°C). Using a serrated knife, slice the chilled pastry log into 1/4″ thick rounds. Place the rounds on two baking sheets with parchment or silicone mats, ensuring each piece is spaced at least 1″ apart to allow even baking.
  5. Bake the Pinwheels: Bake the pinwheels in the preheated oven for approximately 18 minutes, or until the puff pastry is golden brown and the cheese is melted and bubbly.
