Instructions
- Toast Seeds and Nuts: Toast sesame seeds and almonds in a dry pan over medium-low heat for a couple of minutes, or until fragrant. Set aside to cool.
- Make Dressing: In a bowl, whisk together vinegar, sugar, oil, ramen seasoning packet, salt, and pepper until well combined.
- Assemble Salad: In a large bowl, combine shredded cabbage, broken ramen noodles, toasted almonds, and sesame seeds.
- Toss and Serve: Pour the dressing over the salad and toss to coat. Garnish with chopped scallions and serve immediately.
Notes
- Ramen Noodles: Crush the ramen noodles into bite-sized pieces, but don’t over-crush them.
- Dressing: Add the dressing gradually to avoid making the salad soggy.
- Extra Crunch: Toast extra almonds and sesame seeds for additional crunch.
- Variations:
- Use an Asian slaw mix or broccoli slaw mix instead of cabbage.
- Add edamame, cilantro, or chopped jalapeño peppers for extra flavor and texture.
- Prep Ahead: Toast the almonds and sesame seeds and make the dressing in advance.
- Storage: Store leftover salad in the refrigerator for up to 3-4 days. For longer storage, keep the components separate to prevent sogginess.
