Description

 This Ramen Asian Coleslaw is a unique and flavorful twist on traditional coleslaw. It features crunchy ramen noodles, toasted sesame seeds and almonds, and a tangy dressing, making it a delicious and satisfying side dish for any meal.

Salad:

  • 3 tablespoons sesame seeds
  • 1 cup slivered almonds
  • 1 pound shredded cabbage
  • 1 package soy sauce flavored ramen noodles, broken into bite-sized pieces (reserve seasoning packet)
  • 4 scallions, chopped, for garnish

Dressing:

  • 3 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1/3 cup vegetable or canola oil
  • 1/2 teaspoon kosher salt, or to taste
  • 1/4 teaspoon ground black ~pepper, or to taste
  • 1 ramen seasoning packet (from the noodles)

Instructions

  1. Toast Seeds and Nuts: Toast sesame seeds and almonds in a dry pan over medium-low heat for a couple of minutes, or until fragrant. Set aside to cool.
  2. Make Dressing: In a bowl, whisk together vinegar, sugar, oil, ramen seasoning packet, salt, and pepper until well combined.
  3. Assemble Salad: In a large bowl, combine shredded cabbage, broken ramen noodles, toasted almonds, and sesame seeds.
  4. Toss and Serve: Pour the dressing over the salad and toss to coat. Garnish with chopped scallions and serve immediately.

Notes

  • Ramen Noodles: Crush the ramen noodles into bite-sized pieces, but don’t over-crush them.
  • Dressing: Add the dressing gradually to avoid making the salad soggy.
  • Extra Crunch: Toast extra almonds and sesame seeds for additional crunch.
  • Variations:
    • Use an Asian slaw mix or broccoli slaw mix instead of cabbage.
    • Add edamame, cilantro, or chopped jalapeño peppers for extra flavor and texture.
