- 4 egg whites
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2/3 cup cornstarch or substitute with potato starch, tapioca starch, or sweet rice flour
- 1 cup vegetable oil or any neutral oil for frying
For the sauce:
- 1/4 cup Japanese mayo (Kewpie Mayo) or regular mayo
- 3 tablespoons sweetened condensed milk or condensed coconut milk for a dairy-free option
- 2 tablespoons honey
- 1 tablespoon freshly squeezed lemon juice
For the candied walnuts:
- 1/2 cup walnut halves
- 3 tablespoons white granulated sugar or brown sugar
- 1 tablespoon cold water
Optional garnish:
- 1 green onion, finely chopped
Instructions
- Prepare the sauce: In a small bowl, combine all sauce ingredients. Set aside.
- Candy the walnuts: In a non-stick pan over medium heat, caramelize sugar with water. Add walnuts and coat evenly. Remove from heat and transfer to parchment paper.
- Coat the shrimp: Season shrimp, coat with egg whites and cornstarch batter, then fry until crispy and golden brown.
- Combine: Toss crispy shrimp and candied walnuts with the prepared sauce. Garnish with green onions.
