  • 12 Tbsp honey (plus more, to serve)
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Black pepper (freshly cracked, to taste)

Toppings:

  • Fresh thyme (can use dried, if needed)
  • Chopped walnuts (optional; raw or toasted)
  • Extra honey drizzle

Serve With:

  • Crusty, toasted bread (like sourdough or baguette)

Instructions

  1. Prepare Whipped Feta: Add the drained feta cheese and Greek yogurt to a food processor. Blend together for several minutes until smooth and creamy, scraping down the sides with a spatula as needed to ensure an even consistency.
  2. Add Pumpkin and Seasonings: To the food processor, add the canned unsweetened pumpkin puree, 1 to 2 tablespoons of honey depending on your desired sweetness, dried or fresh thyme, and freshly cracked black pepper. Blend everything together until fully combined and smooth.
  3. Chill the Dip: Transfer the whipped feta mixture to a covered container and place it in the refrigerator to chill for 30 to 60 minutes. Chilling helps the dip to firm up and the flavors to meld.
  4. Garnish and Serve: When ready to serve, transfer the chilled whipped feta dip to a serving bowl. Garnish with a handful of chopped walnuts if using, a generous sprinkle of fresh thyme leaves, an extra drizzle of honey, and additional freshly cracked black pepper.
