Instructions
- Preheat and Mix Dry Ingredients: Preheat oven to 325°F (160°C). In a medium bowl, whisk together flour, ½ cup confectioners’ sugar, and salt.
- Cream Butter and Sugar: In a large bowl, beat together butter, ¼ cup confectioners’ sugar, lemon zest, and lemon juice until light and fluffy. Gradually beat in the dry ingredients until just combined.
- Shape and Chill: Roll dough into 1-inch balls and freeze for 12-15 minutes. Place on a parchment-lined baking sheet, spacing them 2 inches apart.
- Bake and Make Indentations: Bake for 10 minutes. Gently press an indentation into the center of each cookie. Bake for another 16-18 minutes, or until lightly browned on the bottom. Cool on a wire rack.
- Make Glaze: While cookies cool, whisk together confectioners’ sugar, lemon juice, and raspberries for the glaze.
- Decorate and Serve: Dust cookies with confectioners’ sugar. Fill indentations with glaze. Let set for at least 10 minutes before serving.
