Tamarind Sauce:

  • 2 tablespoons tamarind concentrate (or 4 tablespoons lime juice)
  • 3 tablespoons fish sauce (or soy sauce)
  • 3 tablespoons palm sugar (or brown sugar)
  • 1 tablespoon chili sauce (such as sriracha)

Pad Thai:

  • 6 ounces rice noodles
  • 1 tablespoon peanut oil
  • 6 ounces shrimp (or chicken or tofu)
  • 2 shallots, chopped
  • 2 cloves garlic, chopped
  • 1 egg, lightly beaten
  • 2 tablespoons roasted peanuts, chopped
  • 1 cup bean sprouts
  • 2 green onions, sliced
  • 2 tablespoons cilantro, chopped
  • 1 lime cut into wedges

Instructions

  1. Prepare Tamarind Sauce: Heat tamarind, fish sauce, sugar, and chili sauce until sugar dissolves.
  2. Prepare Noodles: Soak rice noodles in water until pliable.
  3. Cook Pad Thai: Heat oil in a pan. Sauté shrimp, shallots, and garlic. Add sauce and noodles. Push to the side, add egg, peanuts, bean sprouts, green onions, and cilantro. Remove from heat.
