- 5 medium to large russet potatoes
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 1/2 tsp paprika
- 2 tbsp Italian seasoning
- 2 tsp salt
- 3 tbsp grated parmesan cheese
- Fresh parsley, for serving (optional)
Instructions
- Preheat and Prepare: Preheat oven to 400°F (200°C). Line a large baking sheet (or two smaller sheets) with parchment paper.
- Cut Potatoes: Cut each potato in half lengthwise, then cut each half in half again, and repeat until you have 8 wedges per potato. Place the wedges in a large bowl.
- Seasoning Mix: In a small bowl, whisk together the olive oil, garlic powder, paprika, Italian seasoning, and salt.
- Coat Potatoes: Pour the seasoning mixture over the potato wedges and toss until they are evenly coated.
- Arrange and Bake: Arrange the potato wedges on the prepared baking sheet in a single layer, skin sides down. Sprinkle with half of the parmesan cheese.
- First Bake: Bake for 25 minutes, then flip the wedges to the other side.
- Second Bake: Continue to bake for an additional 10-15 minutes, or until the potato wedges are fork-tender and crispy.
- Finish and Serve: Sprinkle with the remaining parmesan cheese and fresh parsley (if using) before serving. Serve with your favorite dipping sauces.
Notes
- For extra crispy wedges, soak the potatoes in cold water for 30 minutes before seasoning.
- You can adjust the seasoning to your taste, adding other spices like cayenne pepper or onion powder.
- These wedges are delicious with ketchup, ranch dressing, or aioli.
