Description

These crispy and flavorful oven-roasted potato wedges are a perfect side dish for any meal. Seasoned with a blend of garlic, paprika, and Italian herbs, and finished with a sprinkle of parmesan cheese, they’re sure to be a hit with everyone.

  • 5 medium to large russet potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 1/2 tsp paprika
  • 2 tbsp Italian seasoning
  • 2 tsp salt
  • 3 tbsp grated parmesan cheese
  • Fresh parsley, for serving (optional)

Instructions

  1. Preheat and Prepare: Preheat oven to 400°F (200°C). Line a large baking sheet (or two smaller sheets) with parchment paper.
  2. Cut Potatoes: Cut each potato in half lengthwise, then cut each half in half again, and repeat until you have 8 wedges per potato. Place the wedges in a large bowl.
  3. Seasoning Mix: In a small bowl, whisk together the olive oil, garlic powder, paprika, Italian seasoning, and salt.
  4. Coat Potatoes: Pour the seasoning mixture over the potato wedges and toss until they are evenly coated.
  5. Arrange and Bake: Arrange the potato wedges on the prepared baking sheet in a single layer, skin sides down. Sprinkle with half of the parmesan cheese.
  6. First Bake: Bake for 25 minutes, then flip the wedges to the other side.
  7. Second Bake: Continue to bake for an additional 10-15 minutes, or until the potato wedges are fork-tender and crispy.
  8. Finish and Serve: Sprinkle with the remaining parmesan cheese and fresh parsley (if using) before serving. Serve with your favorite dipping sauces.

Notes

  • For extra crispy wedges, soak the potatoes in cold water for 30 minutes before seasoning.
  • You can adjust the seasoning to your taste, adding other spices like cayenne pepper or onion powder.
