- 1 (14-ounce) can diced tomatoes, undrained
- 1/2 cup heavy cream
- 1 (9-ounce) package refrigerated cheese tortellini
- 2 cups loosely packed fresh baby spinach
- Salt and pepper, to taste
- Freshly grated Parmesan cheese (optional, for serving)
Instructions
- Brown Sausage: In a large skillet, brown the sausage over medium-high heat, breaking it up as it cooks. Drain excess grease if necessary.
- Add Ingredients and Simmer: Add garlic, chicken broth, diced tomatoes, heavy cream, and tortellini to the skillet. Cook uncovered, stirring occasionally, for 5-7 minutes, or until tortellini is cooked through and the sauce has reduced.
- Wilt Spinach and Serve: Stir in spinach and cook until wilted. Season with salt and pepper to taste. Serve immediately with grated Parmesan cheese, if desired.
