Description

This One-Pan Sausage Tortellini is a quick and easy weeknight meal that’s ready in under 30 minutes. It features flavorful Italian sausage, cheesy tortellini, and fresh spinach, all simmered together in a creamy tomato sauce.

Ingredients

Units Scale
  • 11 ounces Italian sausage, casings removed and crumbled
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 (14-ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 2 cups loosely packed fresh baby spinach
  • Salt and pepper, to taste
  • Freshly grated Parmesan cheese (optional, for serving)

Instructions

  • Brown Sausage: In a large skillet, brown the sausage over medium-high heat, breaking it up as it cooks. Drain excess grease if necessary.
  • Add Ingredients and Simmer: Add garlic, chicken broth, diced tomatoes, heavy cream, and tortellini to the skillet. Cook uncovered, stirring occasionally, for 5-7 minutes, or until tortellini is cooked through and the sauce has reduced.
  • Wilt Spinach and Serve: Stir in spinach and cook until wilted. Season with salt and pepper to taste. Serve immediately with grated Parmesan cheese, if desired.

Notes

  • Sausage: Use your preferred type of Italian sausage or substitute with bulk sausage.
  • Cream: Avoid substituting heavy cream with milk or half-and-half, as the acidity of the tomatoes may cause it to curdle.
  • Make Ahead: The sausage and tomato mixture can be prepared ahead of time.
  • Storage: Store leftovers in the refrigerator for up to 3 days. Reheat gently on the stovetop.
