- Shape the buckeyes: Scoop one-inch portions of dough onto a parchment-lined baking sheet and roll each into smooth balls. Chill the formed balls in the fridge for 1 hour or in the freezer for 20 minutes to firm up.
- Melt the dipping chocolate: In a microwave-safe bowl, melt the chocolate almond bark and dark chocolate chips together, stirring every 30 seconds until smooth and fully melted (approximately 2 minutes, adjusting for your microwave).
- Dip the buckeyes: Insert a toothpick into one buckeye and dip it halfway into the melted chocolate. Place the dipped buckeyes back onto the baking sheet and repeat with all.
- Chill to set: Refrigerate the dipped buckeye balls until the chocolate coating firms, about 15 minutes.
