Ingredients
Scale
Crust
- 1 cup vanilla wafers (crushed)
- 2 tablespoons unsalted butter (melted)
Cream Cheese Layer
- 4 ounces low-fat cream cheese
- ¼ cup powdered sugar
- 1 cup fat-free Cool Whip
Vanilla Pudding
- 2 ounces Jell-O vanilla pudding mix (2 packages)
- 2 cups milk
Other
- 2 cups fat-free Cool Whip
- 2 medium bananas (sliced)
- 2 tablespoons chocolate shavings or toffee bits
Instructions
- Prepare the crust: Crush about one cup of vanilla wafers and mix them with 2 tablespoons of melted unsalted butter. Press this mixture firmly into the bottom of an 8×8 inch baking dish, then refrigerate until ready to use to help it set.
- Make the vanilla pudding: Prepare the vanilla pudding by combining the 2 packs of Jell-O vanilla pudding mix with 2 cups of milk. Using slightly less milk than instructed on the package results in a firmer pudding. Refrigerate the pudding until it is fully set and ready to layer.
- Create the cream cheese layer: In a mixer, beat together the low-fat cream cheese with the powdered sugar until smooth and well combined. Gently fold in 1 cup of fat-free Cool Whip until the mixture is light and fluffy.
- Assemble the dessert – first layers: Spread the cream cheese mixture evenly over the chilled crust. Then, arrange the sliced bananas over the cream cheese layer carefully to create an even fruit layer.
- Add the pudding layer: Pour the prepared vanilla pudding over the banana slices. Use as much pudding as you prefer; some pudding may be left unused depending on desired thickness.
- Top with Cool Whip and garnish: Spread the remaining 2 cups of fat-free Cool Whip evenly over the pudding layer. Sprinkle your choice of chocolate shavings or toffee bits on top for a decorative, flavorful finish.
- Chill before serving: Refrigerate the assembled dessert for at least 2 to 3 hours to ensure all layers set properly and flavors meld. Once chilled, cut into pieces and serve chilled.
Notes
- Using less milk than the package instructions for the pudding results in a firmer consistency, which is ideal for layering.
- Be careful when spreading the cream cheese mixture and pudding to avoid mixing the layers.
- Refrigeration time is important to let the dessert set firmly before slicing.
- Chocolate shavings can be substituted with toffee bits or crushed nuts for texture variation.
- This dessert is best consumed within 2 days for optimal freshness.
