Description

  • 2 large boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 cup cherry tomatoes or grape tomatoes, halved
  • 1/3 cup Kalamata olives, pitted
  • 1 tablespoon capers, drained
  • 2 cups packed fresh baby spinach
  • 1/2 cup crumbled feta cheese

Instructions

  • Cook Chicken: Cut chicken breasts in half lengthwise to create thinner cutlets. Season with salt, pepper, oregano, and garlic powder. Heat olive oil in a skillet over medium-high heat. Add chicken cutlets and cook for 5-6 minutes per side, or until golden brown and cooked through (internal temperature of 165°F). Transfer chicken to a plate.
  • Sauté and Simmer: Reduce heat to medium. Add garlic, white wine (or broth), tomatoes, olives, and capers to the skillet. Cook until tomatoes begin to soften.
  • Combine and Finish: Stir in spinach and feta cheese. Return chicken to the skillet along with any accumulated juices. Cook until spinach wilts and chicken is heated through. Season with additional salt and pepper, if needed. Serve immediately.

Notes

  • Chicken: You can use boneless, skinless chicken thighs instead of breasts. Adjust cooking time accordingly.
  • Wine: If you prefer not to use wine, substitute with chicken broth.
