Description

A comforting and flavorful Ginger Lime Chicken and Rice Soup with a zesty cilantro lime rice. This soup is the perfect blend of tangy lime, aromatic ginger, and tender chicken in a nourishing chicken broth.


Ingredients

Soup:

  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 6 garlic cloves, minced
  • 3 to 4 tablespoons minced fresh ginger
  • kosher salt and pepper
  • 1 1/2 cups cooked, shredded chicken
  • 4 cups chicken stock
  • 1 teaspoon freshly grated lime zest
  • lime wedges, for serving
  • cilantro, for garnish

Cilantro Lime Rice:

  • 2 cups jasmine rice
  • 3 cups water or chicken stock
  • 1 tablespoon unsalted butter
  • kosher salt and pepper
  • 2 limes, zest freshly grated
  • 3 tablespoons fresh lime juice
  • 3/4 cup chopped cilantro

Instructions

  1. Soup: Heat olive oil in a large stock pot. Sauté onions, garlic, and ginger with salt and pepper. Add chicken, stock, and lime zest. Simmer for 20-30 minutes.
  2. Cilantro Lime Rice: Rinse rice, then cook with water/stock, butter, salt, and pepper. After cooking, stir in lime zest, juice, and cilantro.
  3. To serve, ladle soup over rice, top with cilantro, and serve with lime wedges.
