Soup:
- 1 tablespoon olive oil
- 1 sweet onion, diced
- 6 garlic cloves, minced
- 3 to 4 tablespoons minced fresh ginger
- kosher salt and pepper
- 1 1/2 cups cooked, shredded chicken
- 4 cups chicken stock
- 1 teaspoon freshly grated lime zest
- lime wedges, for serving
- cilantro, for garnish
Cilantro Lime Rice:
- 2 cups jasmine rice
- 3 cups water or chicken stock
- 1 tablespoon unsalted butter
- kosher salt and pepper
- 2 limes, zest freshly grated
- 3 tablespoons fresh lime juice
- 3/4 cup chopped cilantro
Instructions
- Soup: Heat olive oil in a large stock pot. Sauté onions, garlic, and ginger with salt and pepper. Add chicken, stock, and lime zest. Simmer for 20-30 minutes.
- Cilantro Lime Rice: Rinse rice, then cook with water/stock, butter, salt, and pepper. After cooking, stir in lime zest, juice, and cilantro.
- To serve, ladle soup over rice, top with cilantro, and serve with lime wedges.
