Salad

  • 1/2 cup coarsely chopped sun-dried tomatoes in olive oil
  • 11/2 cups chopped Persian cucumber or English cucumber
  • 3/4 cup diced red onion 1/2 of a large onion
  • 1/2 cup finely chopped flat-leaf parsley
  • 1/3 cup crumbled feta cheese

Lemon Dressing

  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon-style mustard
  • 1 teaspoon Italian seasoning
  • 1 clove garlic minced
  • 2 teaspoons honey
  • 1/4 cup olive oil
  • 1 lemon

Instructions

  1. Rinse lentils: In a small pot, combine rinsed lentils, broth, water, and Italian seasoning. Cook until tender, then cool.
  2. Prepare dressing: Combine all dressing ingredients in a jar. Refrigerate until ready to use.
