Description

Donuts:

  • 1 box lemon cake mix
  • 1 large egg
  • 1 cup water
  • 1/4 cup vegetable or canola oil (coconut oil can be substituted)

Icing:

  • 1 cup powdered sugar
  • 1/2 tbsp fresh lemon juice
  • 1 tbsp milk
  • 2 tsp pureed strawberries (optional, for a hint of pink color)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Grease a mini donut pan.
  2. Mix Batter: In a large bowl, whisk together the lemon cake mix, egg, water, and oil until well combined.
  3. Fill Donut Pan: Transfer the batter to a large resealable bag or piping bag. Carefully squeeze the batter into the donut pan, filling each cavity about ⅔ full.
  4. Bake: Bake for 12-14 minutes, or until the edges are lightly golden brown.
  5. Cool: Remove from oven and let the donuts cool in the pan for 5-10 minutes before transferring them to a wire rack to cool completely.
  6. Make Glaze: In a small bowl, whisk together the powdered sugar, lemon juice, milk, and pureed strawberries (if using) until smooth. Add more powdered sugar or milk as needed to reach your desired consistency.
