Description

This delicious Leftover Turkey Spring Rolls recipe transforms your leftover cooked turkey into a fresh, healthy, and vibrant appetizer or light meal. Wrapped in delicate spring roll wrappers with crisp vegetables, fresh herbs, and served with a tasty dipping sauce, these rolls are perfect for a quick snack or entertaining guests.

Ingredients

Scale

Spring Roll Wrappers

  • 8 round spring roll wrappers

Filling

  • 1 1/2 cups leftover cooked turkey, shredded (white or dark meat)
  • 8 medium butter leaf lettuce leaves (red or green)
  • 1 medium carrot, cut into thin strips or shredded
  • 1 small cucumber, cut into thin strips
  • 1 1/4 cup bean sprouts, washed and dried
  • 1/2 cup fresh mint leaves, washed and dried

Dipping Sauce

  • Dipping sauce of your choice

Instructions

  1. Prepare the Vegetables and Herbs: Wash and dry the bean sprouts, mint leaves, and butter lettuce. Cut the carrot and cucumber into thin strips or matchsticks and set them near a clean, flat workspace for easy assembly.
  2. Shred the Turkey: Tear or shred the leftover cooked turkey into small, bite-sized pieces to ensure they fit well inside the spring rolls and are easy to eat.
  3. Soften the Spring Roll Wrappers: Fill a large bowl with warm water. When ready to assemble, dip a spring roll wrapper fully into the water, submerging for a few seconds before flipping to moisten the other side. Remove when the wrapper softens and lay it flat on the work surface.
  4. Assemble the Rolls: Place one butter lettuce leaf in the upper third of the softened wrapper. Layer a small handful of shredded turkey, followed by carrot, cucumber strips, and bean sprouts evenly atop the lettuce. Add a few fresh mint leaves to finish the filling.
  5. Roll the Spring Rolls: Fold the top edge of the wrapper over the filling, then fold in both sides to seal the edges. Roll tightly towards you, using your fingers to keep the filling compact and allow the sticky rice paper to adhere and close the roll completely.
  6. Slice and Serve: Optionally, cut each roll in half crosswise with a serrated knife for easier handling. Serve immediately with your favorite dipping sauce.

Notes

  • Make sure to assemble the rolls just before serving to prevent the wrappers from becoming too soggy.
  • Warm water helps the rice paper soften quickly and evenly.
  • You can substitute turkey with leftover chicken or tofu for a different variation.
  • Feel free to customize fillings with other fresh herbs or crunchy vegetables like bell peppers or radishes.
  • Wraps can be made ahead and covered with a damp towel, but consume within a few hours for best texture.
