- 1 (11-ounce) package white chocolate chips
- 1 (4-ounce) bar white chocolate, roughly chopped
- 2 tablespoons freshly grated lime zest
- 1/4 cup freshly squeezed lime juice
- 1/2 teaspoon vanilla extract
Instructions
- Prepare Crust: Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides. Grease the pan with cooking spray. In a bowl, combine melted butter, sugar, and graham cracker crumbs. Press the mixture into the bottom of the prepared pan. Bake for 5-8 minutes, or until the edges are lightly browned. Let cool completely on a wire rack.
- Make Fudge Filling: In a saucepan over medium heat, combine condensed milk, white chocolate chips, and chopped white chocolate. Stir constantly until the chocolate is melted and smooth. Remove from heat and stir in lime zest, lime juice, and vanilla extract.
- Assemble and Chill: Pour the fudge mixture over the cooled graham cracker crust. Chill for at least 4 hours or overnight until firm.
- Cut and Serve: Lift the fudge from the pan using the parchment paper overhang. Cut into bite-sized pieces and serve.
