  • 3 tbsp butter, divided
  • 2.5 lbs boneless skinless chicken breast, sliced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp chicken broth

For the Alfredo Sauce:

  • 1 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 tsp Italian seasoning
  • 2/3 cup parmesan cheese, grated
  • 1/4 cup pepper jack cheese, grated
  • 3/4 cup mozzarella cheese, grated

Additional Ingredients:

  • 12 oz steam bag of frozen broccoli
  • 3 garlic cloves, minced
  • 1/4 tsp basil

Instructions

  1. Melt butter: Melt 1 tbsp butter in a 10.25 oven-safe skillet.
  2. Sear chicken: Season sliced chicken with salt & pepper, then sear in the skillet until browned on both sides.
  3. Deglaze the pan: Pour chicken broth into the skillet to deglaze, scraping up flavorful bits from the bottom.
  4. Prepare broccoli: Steam broccoli in the microwave or on the stove.
  5. Make the alfredo sauce: Saute garlic in butter, then add cream cheese, heavy cream, and seasonings. Simmer until thickened.
  6. Add cheeses: Stir in parmesan and pepper jack cheese until melted and smooth.
  7. Combine ingredients: Add chicken and broccoli to the alfredo sauce and mix well.
  8. Top with mozzarella: Sprinkle mozzarella cheese and basil over the chicken and broccoli mixture.
  9. Broil: Place the skillet in the oven under the broiler until the cheese is bubbly and golden.
