- 1–2 tablespoons olive oil
- 1/2 cup diced onion
- 1 cup diced green bell pepper
- 1–2 large cloves garlic, minced or pressed
- 1 (28-ounce) can crushed tomatoes (or sauce/puree)
- 1 tablespoon fresh oregano (or 1 teaspoon dried)
- 1 tablespoon fresh basil (or 1 teaspoon dried)
Instructions
- Sauté Vegetables: Heat olive oil in a medium pot over medium heat. Add onions and peppers, and sauté for 5-7 minutes until softened. If they start to brown, add a little water to prevent frying.
- Add Garlic and Tomatoes: Add garlic and sauté for 1 minute, or until fragrant. Stir in crushed tomatoes, oregano, and basil. Reduce heat to medium-low.
- Simmer: Simmer for 45 minutes, stirring occasionally, to allow the flavors to meld.
- Puree (Optional): Use an immersion blender or transfer the sauce to a regular blender to puree until smooth, if desired. Alternatively, leave the sauce chunky.
Notes
- Vegetable Prep: Precise chopping isn’t necessary, especially if you’re pureeing the sauce.
- Chunky or Smooth: The sauce can be left chunky or pureed, depending on your preference.
- Seasoning: Salt and pepper are usually unnecessary, as pizza toppings add plenty of seasoning. Add to taste if desired. For a spicier sauce, include crushed red pepper flakes.
- Freezing: Freeze leftover sauce in smaller portions for convenience.
- Storage: Store in the refrigerator for up to 7 days or freeze for up to 3 months.
