Description

This Italian Chopped Salad is a vibrant and flavorful dish that combines fresh lettuce, savory salami, tangy pepperoncini, and more, all tossed in a zesty Italian vinaigrette. Perfect for a light and satisfying meal.


Ingredients

Romaine Lettuce:

2 large heads, prepared according to Notes below

Red Onion:

1/2 medium, thinly sliced

Pepperoncini Rings:

1/2 cup

Black Olives:

1/2 cup, sliced

Provolone:

1/2 pound, sliced and cut into ribbons

Salami:

1/2 pound, sliced and cut into ribbons

Cherry or Grape Tomatoes:

12 ounces, halved

Black Pepper:

Freshly ground

Italian Vinaigrette:

as needed


Instructions

  1. To serve the salad already dressed: In a large salad bowl, combine lettuce, red onion, pepperoncini, olives, provolone, salami, and tomatoes. Drizzle with Italian Vinaigrette, toss gently, season to taste, and serve.
  2. To serve the salad with dressing on the side: Combine all ingredients in a bowl and serve dressing separately.
  3. To prepare in advance: Make vinaigrette ahead. Prep salad ingredients, store separately, then assemble when ready to serve.

Notes

  • Use a mandoline for uniform onion slices.
  • Chill ingredients if preparing in advance.
