Description

This Instant Pot Chicken Cacciatore is a hearty and flavorful Italian dish that’s ready in minutes. Tender chicken thighs are cooked with tomatoes, onions, peppers, mushrooms, and a blend of herbs and spices, creating a comforting and satisfying meal.


Ingredients

  • 1 tablespoon olive oil
  • 2 pounds boneless, skinless chicken thighs
  • 1 (28 ounce) can crushed tomatoes
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 8 ounces sliced mushrooms (any variety)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 teaspoon balsamic vinegar
  • 2 teaspoons Italian seasoning
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Brown Chicken: Turn the Instant Pot to SAUTE mode. Add the olive oil and heat. Add the chicken thighs and cook for about 2 minutes per side, until lightly browned.
  2. Deglaze: Pour the crushed tomatoes into the pot, scraping the bottom with a wooden spoon to loosen any browned bits.
  3. Add Remaining Ingredients: Add the onion, green pepper, mushrooms, salt, pepper, garlic, balsamic vinegar, and Italian seasoning to the pot. Stir to combine.
  4. Pressure Cook: Secure the lid and set the pressure valve to SEALING. Select HIGH PRESSURE and set the cook time for 12 minutes.
  5. Natural Release: Allow the pressure to release naturally for 10 minutes, then perform a quick release.
  6. Stir and Serve: Open the lid and stir in the chopped parsley and basil. Serve the chicken cacciatore over cooked noodles or pasta.

Notes

  • This recipe was created for a 6-quart Instant Pot. Prep time does not include the time it takes for the pot to come to pressure (about 12 minutes).
  • You can use chicken breasts instead of thighs without changing the cook time, but thighs tend to be more flavorful and moist.
  • To thicken the sauce, make a slurry of cornstarch and water and add it to the pot after cooking, using the SAUTE function to simmer until thickened.
