It’s a deliciously tropical dish that’s perfect for summer grilling.

Ingredients

Marinade:

  • 45 pounds boneless skinless chicken thighs
  • 1/2 cup packed light brown sugar
  • 1/2 cup ketchup
  • 1/2 cup light soy sauce
  • 1/2 cup pineapple juice canned
  • 1 tablespoon ginger paste or minced ginger
  • 1 tablespoon garlic paste or minced garlic
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coarse black pepper
  • 1/2 teaspoon paprika smoked or sweet

Additional:

  • Pineapple rings – 1 pineapple or 1 can of slices drained
  • 1/2 cup sliced green onions for garnish

Instructions

  1. Rinse and Prep: Rinse chicken thighs and pat dry.
  2. Prepare Marinade: In a large bowl or ziplock bag, mix all marinade ingredients (except chicken) thoroughly.
  3. Marinate Chicken: Add chicken to the marinade, ensuring all pieces are coated. Refrigerate for at least 4 hours.
  4. Grill Chicken: Heat grill, cook chicken for 10 mins each side until internal temperature reaches 165°F.
  5. Grill Pineapple: Grill pineapple rings until golden.
  6. Final Touches: Brush reserved marinade over chicken and serve with grilled pineapple.

Notes

  • For added flavor, you can reserve some marinade before adding the chicken and use it as a sauce after grilling.
  • Adjust sweetness or saltiness to taste by modifying sugar or soy sauce quantities.
