Description

These Honey Balsamic Chicken Drumsticks are a delicious and easy-to-make dish that’s perfect for a weeknight meal. The chicken is coated in a sweet and tangy honey balsamic glaze and baked to perfection in the oven or cooked quickly in an Instant Pot.


Ingredients

  • 1/3 cup honey
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1/4 cup balsamic vinegar
  • 1/2 cup Dijon mustard
  • 1 teaspoon minced garlic
  • 2 tablespoons olive oil
  • 6 chicken drumsticks, skins removed
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

Oven-Baked:

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, whisk together the honey, brown sugar, water, balsamic vinegar, Dijon mustard, minced garlic, and olive oil.
  3. Add the chicken drumsticks to the bowl and toss to coat in the sauce.
  4. Place the chicken in a single layer in a greased baking pan.
  5. Sprinkle with salt and pepper.
  6. Bake for 30-35 minutes, or until the chicken is cooked through and the juices run clear.

Instant Pot:

  1. Mix together the honey, brown sugar, water, balsamic vinegar, Dijon mustard, minced garlic, and olive oil.
  2. Pour the sauce into the Instant Pot and set it to SAUTE mode.
  3. Allow the sauce to cook for 2 minutes, stirring occasionally.
  4. Add the chicken drumsticks to the pot and sprinkle with salt and pepper.
  5. Secure the lid and set the Instant Pot to MANUAL mode for 15 minutes.
  6. Once cooking is complete, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
  7. Serve hot.

Notes

  • You can use chicken thighs or bone-in, skin-on chicken pieces instead of drumsticks. Adjust cooking time accordingly.
  • For a thicker sauce, reduce the amount of water or simmer the sauce on the stovetop for a few minutes before using.
  • Serve with your favorite sides, such as rice, mashed potatoes, or roasted vegetables.
