For the Bolognese Sauce:

  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 1 medium carrot, finely diced
  • 2 celery stalks, finely diced

  • 1 lb (500 g) lean ground beef
  • 1/2 cup (100 ml) dry red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/4 teaspoon red chili flakes
  • 2 cans (14 oz / 400 g each) crushed tomatoes
  • 1 cup (250 ml) beef stock
  • 2 bay leaves

For the Gnocchi:

  • 1 1/2 lb (900 g) gnocchi
  • 1/3 cup (30 g) grated Parmesan
  • 68 fresh basil leaves, roughly torn
  • Salt and freshly ground black pepper to taste

Instructions

  1. Sauté the Vegetables: Heat olive oil in a large pan, cook onion, carrot, and celery until softened.
  2. Add the Meat: Add garlic and ground beef, cook until browned.
  3. Deglaze: Pour in wine, cook until alcohol evaporates.
  4. Add Flavor: Stir in tomato paste, thyme, rosemary, and chili flakes.
  5. Simmer: Add crushed tomatoes, beef stock, bay leaves, simmer for 15 minutes.
  6. Cook Gnocchi: Boil gnocchi in salted water according to package instructions.
  7. Combine and Serve: Mix cooked gnocchi into sauce, add Parmesan and basil. Season and serve hot.

Notes

  • You can substitute ground turkey or pork for the beef for a different twist.
  • Feel free to add a splash of cream at the end for a richer sauce.
