Ingredients
Scale
Apple Filling
- 6 medium apples, peeled, cored, and thinly sliced (about 6 cups sliced apples)
- 1 tablespoon lemon juice
- 1 tablespoon pure maple syrup
- 2 tablespoons arrowroot flour
- 1 ½ teaspoons cinnamon
- ⅛ teaspoon nutmeg
Crisp Topping
- 1 cup blanched almond flour
- ¼ cup coconut sugar
- 1 cup chopped raw pecans
- 2 teaspoons cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon sea salt
- ⅓ cup coconut oil, room temperature (soft but not melted)
- 2 tablespoons pure maple syrup
Optional Topping
- Coconut Whipped Cream or coconut milk ice cream or coconut milk yogurt, for serving
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C). Lightly grease a 2.5-quart baking dish with coconut oil to prevent sticking.
- Prepare the apple filling: In a large mixing bowl, combine the thinly sliced apples with lemon juice and 1 tablespoon of maple syrup. In a separate small bowl, mix the arrowroot flour, 1 ½ teaspoons cinnamon, and ⅛ teaspoon nutmeg. Toss the arrowroot mixture into the apples until well coated. Transfer the apple mixture evenly into the greased baking dish.
- Make the crisp topping: In a medium bowl, combine almond flour, coconut sugar, chopped pecans, 2 teaspoons cinnamon, ground nutmeg, and sea salt. Add the softened coconut oil and use a fork to cut the oil into the dry ingredients until the mixture resembles coarse crumbs. Slowly add maple syrup, one tablespoon at a time, mixing until the topping forms a wet crumble.
- Assemble the crisp: Evenly crumble the prepared topping over the apple mixture in the baking dish, covering the apples completely.
- Bake: Place the baking dish in the preheated oven and bake for 40–45 minutes, or until the apple filling is bubbling slightly around the edges and the topping is golden brown.
- Serve: Allow to cool slightly before serving. Enjoy warm with optional coconut whipped cream, coconut milk ice cream, or coconut milk yogurt for a creamy complement.
Notes
- Use crisp and slightly sweet apple varieties such as Honeycrisp, Pink Lady, or Golden Delicious for the best flavor and texture.
- This recipe can also be baked in a 9-inch pie dish if preferred.
- Do not over-mix the crisp topping; it should remain slightly crumbly and uneven for the perfect texture.
