Crisp Topping

  • 1 cup blanched almond flour
  • ¼ cup coconut sugar
  • 1 cup chopped raw pecans
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon sea salt
  • ⅓ cup coconut oil, room temperature (soft but not melted)
  • 2 tablespoons pure maple syrup

Optional Topping

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C). Lightly grease a 2.5-quart baking dish with coconut oil to prevent sticking.
  2. Prepare the apple filling: In a large mixing bowl, combine the thinly sliced apples with lemon juice and 1 tablespoon of maple syrup. In a separate small bowl, mix the arrowroot flour, 1 ½ teaspoons cinnamon, and ⅛ teaspoon nutmeg. Toss the arrowroot mixture into the apples until well coated. Transfer the apple mixture evenly into the greased baking dish.
  3. Make the crisp topping: In a medium bowl, combine almond flour, coconut sugar, chopped pecans, 2 teaspoons cinnamon, ground nutmeg, and sea salt. Add the softened coconut oil and use a fork to cut the oil into the dry ingredients until the mixture resembles coarse crumbs. Slowly add maple syrup, one tablespoon at a time, mixing until the topping forms a wet crumble.
  4. Assemble the crisp: Evenly crumble the prepared topping over the apple mixture in the baking dish, covering the apples completely.
  5. Bake: Place the baking dish in the preheated oven and bake for 40–45 minutes, or until the apple filling is bubbling slightly around the edges and the topping is golden brown.
