Delicious and healthy banana bread made in the air fryer. This recipe yields 3 mini loaves that are moist and flavorful, perfect for a quick snack or breakfast.

Wet Ingredients:
- 2 1/2 cups (500 g) mashed or pureed overripe bananas
- 1/4 cup melted coconut oil or avocado oil
- 2 large eggs
- 1 teaspoon vanilla extract
Dry Ingredients:
- 1 3/4 cups (198 g) white whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1/2 cup mix-ins (optional; see notes)
Instructions
- Prepare the pans and preheat the air fryer: Lightly rub three mini loaf pans with butter or coconut oil. Preheat the air fryer to 320°F (160°C).
- Mash your bananas: Using a fork, potato masher, or blender, mash or puree the bananas in a medium bowl.
- Mix in the remaining wet ingredients: Add the oil, eggs, and vanilla and mix until well combined.
- Combine the dry ingredients: In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, and mix-ins. Add the flour mixture to the wet ingredients and mix until fully incorporated.
- Bake the loaves: Divide the batter between the prepared pans. Cook in the air fryer at 320°F for 17-21 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and enjoy: Allow the loaves to cool before slicing and serving.
Notes
- You can add nuts, chocolate chips, or dried fruit as mix-ins for added flavor and texture.
