Description

Delicious and healthy banana bread made in the air fryer. This recipe yields 3 mini loaves that are moist and flavorful, perfect for a quick snack or breakfast.


Ingredients

Wet Ingredients:

  • 2 1/2 cups (500 g) mashed or pureed overripe bananas
  • 1/4 cup melted coconut oil or avocado oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 3/4 cups (198 g) white whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1/2 cup mix-ins (optional; see notes)

Instructions

  1. Prepare the pans and preheat the air fryer: Lightly rub three mini loaf pans with butter or coconut oil. Preheat the air fryer to 320°F (160°C).
  2. Mash your bananas: Using a fork, potato masher, or blender, mash or puree the bananas in a medium bowl.
  3. Mix in the remaining wet ingredients: Add the oil, eggs, and vanilla and mix until well combined.
  4. Combine the dry ingredients: In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, and mix-ins. Add the flour mixture to the wet ingredients and mix until fully incorporated.
  5. Bake the loaves: Divide the batter between the prepared pans. Cook in the air fryer at 320°F for 17-21 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and enjoy: Allow the loaves to cool before slicing and serving.

Notes

  • You can add nuts, chocolate chips, or dried fruit as mix-ins for added flavor and texture.
