Description

  • 3 potatoes, peeled and diced
  • 1 onion, finely diced

  • 3 cups beef broth
  • 24 oz Italian or spaghetti sauce
  • 14.5 oz can diced tomatoes, undrained
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 24 oz frozen mixed vegetables, thawed

Instructions

  1. Brown Beef and Sauté Vegetables: In a large Dutch oven or pot, brown the ground beef over medium-high heat. Add the diced onion and garlic, and cook until the onion is softened and the beef is cooked through. Drain off any excess grease.
  2. Simmer with Sauce and Seasonings: Add beef broth, spaghetti sauce, diced tomatoes, Worcestershire sauce, Italian seasoning, bay leaf, and red pepper flakes (if using) to the pot. Stir to combine. Bring the mixture to a simmer.
  3. Cook and Add Vegetables: Cover and simmer for 10 minutes. Stir in the thawed mixed vegetables.
  4. Simmer Until Tender: Continue to simmer for about 20 minutes, or until the potatoes are tender.
  5. Season and Serve: Remove the bay leaf. Season with salt and pepper to taste. Serve hot.
