- 1 lb ground beef
- 3 potatoes, peeled and diced
- 1 onion, finely diced
- 1 tablespoon minced garlic
- 3 cups beef broth
- 24 oz Italian or spaghetti sauce
- 14.5 oz can diced tomatoes, undrained
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1 bay leaf
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 24 oz frozen mixed vegetables, thawed
Instructions
- Brown Beef and Sauté Vegetables: In a large Dutch oven or pot, brown the ground beef over medium-high heat. Add the diced onion and garlic, and cook until the onion is softened and the beef is cooked through. Drain off any excess grease.
- Simmer with Sauce and Seasonings: Add beef broth, spaghetti sauce, diced tomatoes, Worcestershire sauce, Italian seasoning, bay leaf, and red pepper flakes (if using) to the pot. Stir to combine. Bring the mixture to a simmer.
- Cook and Add Vegetables: Cover and simmer for 10 minutes. Stir in the thawed mixed vegetables.
- Simmer Until Tender: Continue to simmer for about 20 minutes, or until the potatoes are tender.
- Season and Serve: Remove the bay leaf. Season with salt and pepper to taste. Serve hot.
