Cheese Mixture
- 16 oz Boursin cheese
- 12 oz cream cheese
Topping
- 12 oz red pepper jelly (6 oz for drizzling, remaining for serving)
- 2–3 tablespoons water (to thin jelly)
Instructions
- Blend Cheeses: In a mixer, combine the cream cheese and Boursin cheese until smooth and well incorporated. You may add additional spices or herbs if desired to enhance flavor.
- Fill Mold: Scoop the cheese mixture into a brain-shaped mold. Cover the surface with plastic wrap, pressing it directly on top of the dip to prevent drying. It’s fine if the mold is not completely full.
- Chill: Place the mold in the refrigerator overnight to allow the cheese mixture to firm up and hold its shape.
- Unmold Brain: On the morning of your party, remove the mold from the fridge and peel off the plastic wrap. Invert the mold onto your serving platter and let it rest at room temperature for at least 10 minutes so the brain shape can loosen from the mold. Silicone molds are easiest for removal by gently peeling off.
- Thaw and Prepare Jelly: Let the brain dip thaw at room temperature for a few hours to achieve the best texture for serving. In a small bowl, mix about 6 oz of red pepper jelly with 2 to 3 tablespoons of water just enough to thin it slightly so it can drip over the brain as a ‘bloody’ glaze. Be careful not to add too much water.
- Decorate and Serve: Use a knife to score or pierce the center of the brain for added eerie effect. Drizzle the thinned red pepper jelly over the brain to mimic dripping blood. Serve with crackers and enjoy this festive Halloween appetizer.
