Instructions

  1. Heat the Oil: In a cast iron skillet, heat the extra virgin olive oil over medium-high heat to prepare for cooking the turkey and vegetables.
  2. Cook the Ground Turkey and Garlic: Add the ground turkey and minced garlic to the skillet. Use a wooden spoon to break up the turkey into small pieces as it cooks. Stir occasionally and cook for about 5 minutes until turkey is no longer pink.
  3. Sauté Onions and Yellow Peppers: Add diced onions and yellow peppers to the skillet. Cook, stirring occasionally, until the onions become soft and translucent.
  4. Add Sweet Potatoes and Seasonings: Mix in the diced sweet potatoes, pinch of red chili flakes, salt, and freshly ground black pepper. Stir to combine evenly.
  5. Cook Sweet Potatoes Covered: Cover the skillet and cook, stirring occasionally, until the sweet potatoes are tender. Add a little olive oil or water if necessary to help soften the sweet potatoes and prevent sticking. This usually takes about 7-8 minutes.
  6. Preheat the Oven: While the sweet potatoes cook, preheat the oven to 400ºF (204ºC) to prepare for melting the cheese.
  7. Melt the Cheese in the Oven: Once the sweet potatoes are tender, sprinkle the shredded mozzarella cheese evenly over the skillet mixture. Transfer the skillet to the preheated oven and bake until the cheese is melted and bubbly, about 5 minutes.
  8. Garnish and Serve: Remove the skillet from the oven, garnish with fresh parsley if desired, and serve hot for a delicious and filling meal.

  • For a Whole30 or Paleo version, omit the mozzarella cheese topping.
