  • 1/2 red onion, sliced
  • 2 teaspoons dried oregano
  • Pinch of salt, plus more to taste
  • Ground black pepper, to taste

For the seasoned ground beef:

  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning mix
  • 1/3 cup water

For assembling the bowls:

  • 3 to 4 cups chopped romaine lettuce
  • 1 1/2 cups steamed rice
  • 1 cup black beans, rinsed and drained
  • 1/2 cup shredded white cheddar cheese
  • Corn salsa
  • Tomato salsa or pico de gallo
  • Guacamole or sliced avocado
  • Sour cream, cilantro, lime wedges for serving (optional)

Instructions

  1. Cook the peppers and onions: In a large skillet, heat oil over medium-high heat. Add peppers and onions, season with oregano, salt, and pepper. Cook until slightly softened. Transfer to a bowl and set aside.
