Description

This Ground Beef and Broccoli stir-fry is a quick and easy weeknight dinner that’s ready in just 30 minutes. Tender beef and vibrant broccoli florets are coated in a savory Asian-inspired sauce, making it a healthy and satisfying meal.


Ingredients

  • 34 cups broccoli florets, cut into small pieces
  • 1 pound lean ground beef

For the Sauce:

  • 1/2 cup low-sodium soy sauce
  • 1 cup water
  • 1/2 teaspoon apple cider vinegar or rice vinegar
  • 1/2 teaspoon toasted sesame oil
  • 1/4 cup packed brown sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon grated fresh ginger
  • 4 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes, or more to taste

Instructions

  • Prep and Make Sauce: Prepare all ingredients as listed. In a bowl, whisk together all sauce ingredients until smooth.
  • Cook Broccoli: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add broccoli florets and cook, stirring often, until tender-crisp. Transfer broccoli to a plate.
  • Brown Beef: Add the remaining olive oil to the skillet. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain excess fat if necessary.
  • Combine and Finish: Reduce heat to medium. Return broccoli to the skillet and pour in the prepared sauce. Stir until well coated and the sauce thickens.
  • Serve: Serve immediately over rice or your preferred side dish.
