Description

These Grinder Sliders are the ultimate party appetizer or easy weeknight dinner! Mini Hawaiian rolls are layered with deli meats, provolone cheese, and a tangy grinder salad, then baked to golden perfection. The combination of warm, melty cheese and the crisp, flavorful salad creates a delicious and satisfying bite.


Ingredients

Sliders:

  • 12 Hawaiian rolls
  • 4 ounces sliced pepperoni
  • 4 ounces sliced salami
  • 8 ounces deli turkey or ham, sliced
  • 4 ounces provolone cheese, sliced

Butter Glaze:

  • 2 tablespoons butter
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon dried Italian seasoning
  • 2 tablespoons Parmesan cheese, grated

Grinder Salad:

  • 2 1/2 cups iceberg lettuce, shredded
  • 2 tablespoons red onion, diced
  • 1 small tomato, chopped
  • 1/4 cup pepperoncini peppers, chopped
  • 1/4 cup mayonnaise
  • 1 teaspoon red wine vinegar
  • 1 teaspoon garlic, minced
  • 2 tablespoons pepperoncini pepper liquid
  • 1 teaspoon Italian seasoning
  • 1 tablespoon grated Parmesan cheese
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon cracked black pepper

Instructions

Prepare Sliders:

    1. Preheat the oven to 350°F (175°C).
    2. Cut the Hawaiian rolls in half horizontally. Place the bottom half on a small sheet pan or in a casserole dish.
    3. Layer the pepperoni, salami, provolone cheese, and turkey or ham on top of the rolls.
    4. Place the top half of the rolls on top of the meat layer.

Make Butter Glaze:

    1. Melt the butter in a small bowl. Add the garlic salt, Italian seasoning and Parmesan cheese. Stir to combine.
    2. Brush the butter glaze on top of the rolls.
    3. Cover with aluminum foil.
    4. Bake for 20 minutes.

Prepare Grinder Salad:

    1. While the sliders are baking, prepare the grinder salad.
    2. In a medium bowl, add the shredded iceberg lettuce, red onion, pepperoncini peppers, and tomato.
    3. In a small bowl, whisk together the mayonnaise, red wine vinegar, minced garlic, pepperoncini pepper liquid, Italian seasoning, Parmesan cheese, kosher salt, and black pepper.
    4. Pour the dressing over the salad mixture and toss to combine.

Assemble Sliders:

    1. Remove the sliders from the oven and carefully remove the top rolls.
    2. Spoon the grinder salad mixture over the meat and cheese layer.
    3. Replace the top of the rolls.
    4. Slice and serve immediately, and enjoy warm!

Notes

  • Adjust the amount of pepperoncini peppers and pepperoncini liquid to control the spice level.
  • Use your favorite deli meats and cheeses for variety.
  • For extra melty cheese, place the sliders under the broiler for a minute or two after baking.
  • You may use another type of small roll if you do not have Hawaiian rolls.
  • For a spicier salad, add red pepper flakes to the dressing.
