Description

Warm up with this comforting Green Chile Chicken Stew, packed with tender chicken, fire-roasted chiles, and flavorful spices. A satisfying meal for any day of the week!

Main Stew:

  • 2 tbsp olive oil
  • 1 small yellow onion, diced
  • 1 cup corn (from about 2 ears)
  • 4 cloves garlic, minced
  • 1 tbsp ground coriander
  • 1 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 3 Hatch chiles (fire-roasted), seeds removed and diced
  • 1 (16 oz) jar salsa verde
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 lime, juiced
  • 1 small rotisserie chicken, pulled
  • 1 tbsp fresh cilantro, chopped
  • 1/2 cup long-grain white rice

Optional Garnish:

  • lime wedges

Instructions

  1. Saute Aromatics: Heat olive oil in a large stock pot. Cook onions and corn until fragrant.
  2. Add Spices: Stir in garlic, coriander, cumin, paprika, salt, and pepper.
  3. Introduce Chiles and Liquid: Add hatch chiles, salsa verde, chicken broth, water, and lime juice. Bring to a boil.
  4. Simmer: Incorporate pulled chicken and cilantro. Simmer for 20 minutes.
  5. Add Rice: Stir in rice and cook until tender, about 15 minutes.
  6. Garnish and Serve: Top with cilantro and optional garnishes before serving.

Notes

  • If fresh Hatch chiles are unavailable, canned can be used as a substitute.
